Day 6: 30 September

In the afternoon I am shown the galley where Franco and a team of 11 are preparing dinner for 300. Franco, a Neapolitan who's been 27 years 'man and boy' with Adriatica, gives me a rapid lesson in breadmaking. The essence seems to be controlled panic. Once the dough is prepared Franco sets to at a furious pace, kneading, twisting, tying, folding, muttering, cursing and turning out, in the space of a minute, about 25 little rolls which an uncharitable observer would compare to a series of exquisitely formed dog turds. Egomaniac to the last I produce, after two or three attempts, a passable letter 'P' which I shall eat later.
