Of Mexican life. On Arizona Illustrated, our favorite U of A Professor Big Jim Griffith was talking about making tortillas and masa (the corn filling for tamales).

Flour tortillas are strictly a product of the border. Wheat seeds were brought to this region by Father Kino.

I know how to make tortillas and tamales. It is actually not very difficult. We can buy the full corn kernels, the Nixmatal in our local supermarket. Then get Pork, Chicken or Carne Asasda for fillers.

He knows how to make tortillas (scrummy) AND tamales (though I have to admit I haven't a CLUE what they are!!

The tamales sound delicious--I'll have to try making some. We have a large Hispanic population around here, I'll bet the masa won't be hard to find.

I've made delicious tamales but the corn husks were so small when I wrapped them they were bite size! Oh well..."Tamales? Yes, please! About 30 of them."

I have looked at the sites Mike - the tamales look delicious!! Remind me a bit of dolma, Turkish stuffed vine leaves - but it looks a lot nicer!!

I shall have to get over to Arizona and get you to cook me some!!

Anne, you have a deal. Same idea as Dolma, only with Tamales, you are only using the wrapping in the cooking process, you do not eat it.

No, Michelle, unless you put chicken in the Tamales, they do NOT taste like chicken LOL!
