Just received a publisher's ad from Elsevier for a new edition (the *3rd*!) of their famous 2-volume work, "Cheese: chemistry, physics & microbiology". Vol.2 is titled, "Major Cheese Groups" & is approx. 500pp. That's a lot of cheese!

There's also an ad for the "Encyclopedia of Dairy Sciences" wherein are listed *all* those who are Blessed (not only the cheesemakers).

gouda is good

as long as they don't put american cheese in the book - it is not cheese, it is a manufactured cheese- food product , or something to that effect. though i personnally think there is some question about its being a food.....
