Is the soil of a similar consistency and hue to that found in the Grand Canyon?

Just about. Only when it rains is the soil soft. You live in Australia though, I am sure you are accustomed to that!

Roses, cacti. I do not want citrus trees, would not use the fruit enough and the excess just falls on the ground and rots, attracting bugs.

That's too bad about the fruit. Couldn't you give it away to a food bank or soup kitchen? I stayed at a B&B in Scottsdale in March 1990, and there was a grapefruit tree right near our window wafting the heady scent of blossoms into our room. There was some fruit on it too, and we had that for breakfast. YUM!
