Soup Recipe for mrsteabag by geordiegirl on 25 August 2008 4:00pm
2 really tasty sausages, seared briefly in the frying pan, then chopped into small chunks
1 medium onion, peeled & chopped
1 medium-sized zucchini, chopped into small pieced
1-2 tbsp parmesan cheese, grated
1-2 handfuls green peas or beans, fresh or frozen
1 handful small pasta shapes
about 1 pint good meat stock, increased with water, during cooking, if necessary
1 tbsp tomato puree
1 pinch chili powder (not too much)
2 bay leaves

Simmer onion, sausages, chili, parmesan, bay leaves, in the stock for 25 minutes.

Then add courgettes, pasta shapes,peas/beans, tomato puree, simmer another 15 minutes.

(At this stage you can decide if it's to be a soup or a stew - if the former, add more water: if the latter, there should be enough liquid there)

Then, when it's all softened, add lots of black pepper.

Leave to cool, & better the next day.

Here you are, Fran, good luck - it's really tasty. Hope we aren't seperated too much by a common language in use of cooking terms!

This recipe sounds weird but I've fed it to people who absolutely HATE cauliflower and they've loved it.

Cashew Cauliflower Soup

Break up one head of cauliflower into a soup pot. Cover with a rich chicken broth (or a rich veggie broth if you're feeding non-meat eaters.)
Add one or two two handfuls of toasted cashews (depending on how rich you want the soup to be. After making it once or twice, you'll find out the proportion you like best.)
Add pepper (and salt if the cashews weren't salted.)
Cook on medium low until nuts are soft then puree. (A hand-held blender is best but blender or food processor will work.)

You'll end up with an extremely creamy soup that people can't believe has no dairy products in it.

Here's a soup I did today, a fish chowder:

liqour from 4 quarts oysters
1 cup 10% cream
black pepper
lemon juice
other fish or seafood
fresh chopped parsley
oregano flowers
veggies all cut small:potato, carrot, cucumber, zuke, onion, peppers or other veggies as available

Heat butter or oil, add potatoes and carrots, add garlic and onion, do not brown garlic, add peppers, add black pepper and tarragon. Add seafood. Add lemon juice. After a minute or two add potatoes and carrots or other root vegetables. Pour in oyster liquor or strong fish stock, heating gently. When potatoes and carrots are nearly done, add softer vegetables. Finish with more butter and cream. Garnish with tarragon, basil, oregano flowers, as available.

Serve with garlic bread.

1 medium starchy potato
1 medium parsnip
1 large celeriac
1 small onion
1 clove garlic
blue cheese
a little oil
vegatable stock

Chop all the root veg quite coarsely
Chop onion and garlic really small and saute with the root veg ubtil the onions are translucent.
Add stock and bring to the boil.
Simmer gently until veggies are soft.

Either whizz with a hand blender or mash with a masher.

Add pieces of blue cheese and pepper and salt to taste.

It is a creamy soup and goes well with a crusty roll.

Here's a soup I had for lunch :

Minestrone soup.

Ingredients : 1 can of M&S minestrone soup. ( ring-pull can )

Method : Pull back the ring-pull and empty the contents into a microwaveable bowl. Place bowl into microwave and heat for 3 minutes.

Thanks geraldine, pete, Linz, for yours! I love new soup recipes, so will try these ASAP. Do like the idea of blue cheese with potato/root veg.

Pete - the fish chowder sounds lovely: but, liquor from 4 quarts oysters??Cost an arm 'n' a leg in London, mate, will boil some fish skins with onions instead!

If you don't have ingredients to make a fish stock I'm sure you can buy it condensed or dried.

I have a friend who buys many to smoke them. He can get them in the cooler months with his boat but he buys what he needs. He pays $15 a quart and saves me the liquor.

My husband (who does most of the cooking (ex-chef)) used to do a fabulous soup in the winter that we called Winter Soup!! It had really chunky veggies in it and warmed you up superbly. Comfort food at its best.

I tend to make soup like you, Johnny - my all time favourite being Crosse & Blackwell Scotch Broth or Heinz vegetable. They probably taste different now - why do manufacturers have to chabge things?!!

Usually today if I have soup I have cuppa soup:

Switch on the kettle
Open the packet
Shake packet into mug
Wait for kettle to boil
Pour boiling water into mug onto soup
Stir with teaspoon
