Something quick and nutritious preferably and a brief description. If anyone wants the whole recipe, then they can ask. Here's one I discovered the other day and it's delicious.

Marinade in roasting tin (overnight if pos) chicken breasts in olive oil, balsamic vinegar, garlic, shallots, rosemary, thyme, pepper and salt.
When ready to cook, add some water and put in oven for 45 mins and baste. Then transfer chicken to serving dish and bring juices to the boil. Add redcurrant jelly and creme fraiche and serve with veg of your choice. Bon apetit!

My pleasure Sue.
The marinade is enough for up to 4 skinned chicken breasts but I think you could get away with skinned thighs.

4 cloves garlic
8 shallots (onion will do)
6 tablespoons balsamic vinegar
4 tablespoons olive oil
2 sprigs rosemary
2 sprigs thyme
Salt and pepper

Marinade chicken for as long as possible in a roasting tin. (Overnight is ideal but it's still good if you do it in the morning and cook it in the evening)
Heat oven to 190c or gas 5-6.
Add 2 tablespoons of water and cook for 45 minutes, basting 2-3 times durig cooking.
When cooked, transfer chicken into a warmed serving dish and put roasting tin with the juices on the hob. Bring this to the boil and add 2 teaspoons of redcurrent jelly and 4 tablespoons creme fraiche (a little more than a small tub). Adjust seasoning to your taste ans serve.

ooooo, while on the subject of cooking, does anyone have any good ways of not crying while chopping onions?! I end up weeping like a baby!

Tis a bit fiddly but you could try chopping them in one of those clear plastic bags from the supermarket. Works for me and has made garlic a viable ingredient once more after a prolonged ostracism.

Great recipe, BTW! I'd have to go with the chicken thighs though.

Wearing glasses helps Ahren and I have read somewhere that a piece of bread half in your mouth will stop the tears but then you have the problem of what to do with soggy bread!! I think Blasi's plastic bag idea is good though.

Thanks for that sminobe. I just like to learn new and especially quick recipes. I haven't bought Spam for years but I shall buy some tomorrow and try your serving suggestion.
